Sodium Metabisulphite is both a preservative and a sanitiser, so can be used to clean and sterilise your equipment before you use it for homebrew and be added to wine to stabilise it ready for bottling.
Use Sodium Metabisulphite for Cleaning and sterilising your home brew equipment toget rid of bacteria or impurities that could spoil your homebrew. Use Sodium metabisulphite to stop bacteria duplicating.
For use as a steriliser, make up a small amount with water (Dissolve 1 tsp per 1pint of water) and make sure the item to be sterilised has been fully coated in the solution, leave for 10 minutes, then rinse with fresh cold tap water. Be careful to avoid contact with skin and eyes and do not inhale fumes. Use in a well ventilated area.
Can also be used to suppress unwanted bacteria and wild yeasts before a fermentation. When making a wine, you may want to subdue the natural yeasts and bacteria so that additions like pectolase can get to work on the fruit, before you add your yeast. Use 1/16 teaspoon of sodium metabisulphite per 4.5 litres of juice.
When bottling, you can add sodium metabisulphite to preserve a wine after fermentation has completed. Add just before bottling. Use 1/16 teaspoon of sodium metabisulphite per 4.5 litres of wine.
Sodium Metabisulphite also works as a deoxygenator, removing excess oxygen so preventing off flavours and colours changing. Use 1/16 teaspoon of sodium metabisulphite per 4.5 litres.
Sodium metabisulphite can be added to the brewing water prior to making beer to neutralise and chlorine and chloramine in the water making a better tasting beer. Use 1/16 teaspoon of sodium metabisulphite per 4.5 litres.
